Beyond Miso Soup
You may know miso from a bowl of soup. This evening invites you to discover what else it can become.
Through a full-course vegan dinner, Za MISO explores the depth and versatility of Hatcho miso, bringing this traditional Japanese ingredient into new culinary settings.
Our idea is simple: to keep a tradition alive, give people new ways to enjoy it.
Make Miso the Next Matcha.
Inside a Brewery Founded in 1337.
A New Way to Experience MISO.
For centuries, Hatcho Miso has been part of the food culture of Aichi.
At Za MISO, we believe that preserving tradition does not mean keeping it unchanged.
Just as MATCHA has traveled beyond the tea ceremony into cafés, desserts and everyday life around the world, we believe MISO can also evolve into something new.
Desserts.
Drinks.
Global cuisine.
Plant-based dining.
This special night invites guests to experience both sides of MISO:
its deep history — and its future possibilities.
Meet Za MISO
Za MISO is the food project of Keiichi and Rika, exploring new possibilities for miso through plant-based, Gluten free cooking.
After introducing their food at JAPAN EXPO Sydney in 2024 and 2025, they are bringing that spirit of discovery to the place where Hatcho miso is made.
Their mission is to share miso with the world — through food that welcomes both devoted plant-based diners and people simply looking for something delicious and different.
Beyond Miso. Beyond Vegan.
WHY AICHI. WHY NOW.
In 2026, visitors from across Asia and around the world will gather in Aichi and Nagoya.
Za MISO wants travelers to experience more than an event.
We want them to discover the culture, fermentation, history and food traditions that make this region worth visiting.
Our vision is simple:
Turn Aichi from a place people pass through
into a place they travel to experience.
BEYOND VEGAN.
BEYOND MISO.
Tradition survives when people continue to use it.
Our goal is not to change the soul of Hatcho Miso.
It is to expand the ways people can experience it.
From a centuries-old brewery in Aichi to tables around the world.
Make Miso the Next Matcha.
